Happy New Year! Here's to a great 2016!

Hello! Welcome to my blog, (Mostly) Gluten Free and (Almost) Vegan!

I want to introduce myself and provide a couple disclaimers. 




Me at a cool restaurant in Wrigleyville, Chicago. My mom and I were about to go see Billy Joel at Wrigley Field :) The hummus plate was full of veggies and dairy-free hummus. Be careful! I lot of hummus contains milk!

I'm Lindi. 


This is is my first blog. Bare with me as I figure this out.  I have a few reasons for starting this blog. 

1. I want to fiddle around with technology & learn more about websites, designs, and foodie social networking. 

2. I want to be vegan! And gluten free! At different times in my life, I have been one or the other. But never both at the same time, but more on that later. I've never been tested for celiac or other gluten sensitivity. I hope to do that this year. What I do know is for years, I suffered from daily headaches and frequent migraines. I went to various doctors, who only prescribed medicines, but never considered an underlying problem. A friend of mine gave me Wheat Belly by Dr. William Davis, and told me about her success with a gluten free diet. I thought I would try it. And low & behold, the headaches and migraines ceased. Added bonus, I felt so much more energetic and lost some weight.  I want to be vegan because it's the right thing to do ethically for animals and the environment. It's also full of wonderful benefits for one's health. Again, more on that later!

3. If I write a blog, it sort of obligates me to keep up with it. I want this to be a resource for me, and for you. I hope it's a place to put all kinds of information together, like flour conversions, protein tables, etc. I hope to try out lots of different recipes from various cookbooks, online resources, friends, and hopefully by the end of the year, even some concoctions of my own! 

4. I enjoy writing for fun & a professor of mine seemed to think I might have a knack for blogging. I think this is something that could be really fun. 

A disclaimer: At this point in my life, I am not completely vegan nor completely gluten free. I promise that, to the best of my knowledge, I will ALWAYS indicate whether a recipe is gluten free and/or vegan. My goal is to include 95% recipes that are both, and will ALWAYS provide alternatives in recipes so that they are. I will have a hard time giving up eggs. And I may not completely ditch them. However, I only eat eggs from chickens that I know. I live in a rural area, with neighbors surrounding me who all have chickens. So, farm-fresh eggs from free range and happy chickens are abundant. 

A little about me: My name is Lindi. I'm a grad student who always works full-time. I'm earning a Masters degree in Urban and Regional Planning from Ball State University in Muncie, Indiana. I grew up in the rural area surrounding Anderson, Indiana. I currently live in a little studio-style converted garage about 8 minutes from the house I grew up in. 

I am a fur-mom to two awesome cats, Deuce (grey) and Boo (black). They're litter mates that I rescued off a farm in Oklahoma about four and half years ago. 

I just got engaged! 2016 is going to be awesome, because on January 1 of this year, my wonderful then-boyfriend Vaughn, asked me to marry him, making it the happiest day of my life. He poses an interesting and wonderful challenge to this food situation. I love to cook. He loves to eat. But, he loves his cheese and is scared of lots of vegan items. My goal is to find recipes that he loves and asks for again. 

I'm excited to start blogging. I request that everyone in this space treat everyone else with respect and open-mindedness. Any comments made in poor taste will be removed. This blog is about growing, learning about and preparing excellent foods, and helping to live healthy, fulfilling lifestyles. This isn't about being perfect or shoving ideals down throats. Again, growing & learning. Please keep this in mind when reading & commenting.
